Curry Beef Puffs

When I lived in Singapore for a bit one of the best, quick things to eat, were these curry puffs from the local bakeries. They were fluffy, hot, full of flavors and just oh-so-delicious. It’s the perfect snack and I had a craving, so I decided to make a big batch for our family and our neighbors. I promise you it will make you the most popular house on the block!

MAKING YOUR CURRY BEEF PUFFS

Makes: About 18 curry puffs

INGREDIENTS

3 tablespoons vegetable oil
1 large onion (finely diced)
2 cloves of garlic (minced)
1 pound ground beef
2 tablespoons curry powder
1 1/2 teaspoons turmeric powder
1/2 teaspoon cumin powder
1/4 teaspoon sugar
1/4 teaspoon black pepper
1 teaspoon salt
2/3 cup beef broth
1 tablespoon cornstarch
2 sheets puff pastry (490 g)
1 egg (beaten with 1 tablespoon water to make an egg wash)

INSTRUCTIONS

1. In a wok, heat vegetable oil over medium high heat. Add the onions and garlic and cook until translucent and just slightly caramelized.

2. Add ground beef - breaking it up as it cooks. Cook until it’s browned and then add the curry powder, turmeric, cumin, sugar, black pepper and salt. Stir everything together and cook the mixture for another couple of minutes.

3. Make a cornstarch slurry on the side by mixing beef broth with 1 tablespoon of cornstarch and stir the slurry into the beef mixture and simmer for a few minutes until it’s all thickened. Transfer beef mixture to a bowl to cool.

4. Once the filling has cooled, take your puff pastry out of the freezer and defrost for about 35 minutes - no more than that. Unfold each puff pastry sheet, and cut each one into 9 squares.

4. Spoon about 3 tablespoons of filling onto each square, and fold diagonally to form a triangle, pressing the edges together. Crimp the edges with a fork and transfer to a baking sheet. Repeat with the remaining squares of puff pastry. You’ll need two baking sheet.

5. When the puffs are formed, refrigerate for 15-20 minutes and preheat your oven to 400 degrees F.

6. When the oven is preheated, remove the puffs from the refrigerator, and brush with egg wash. Bake the puffs (one sheet at a time) for 15-18 minutes or until golden brown. Let cool for 10-15 minutes before attempting to eat, as the filling will be very hot!
