Flourless Chocolate Cookies

Sometimes I feel better about satisfying my sweet tooth when I skip the flour and butter. For whatever reason, I feel like I’m being “healthier”. I’ve had these flourless cookies in the past, but never believed they were made without butter and flour! They are some of the fudgiest cookies you will ever consume, they also have the crispiest edges! They’re incredibly addicting and delicious so don’t worry if you eat more than a few!

MAKING YOUR FLOURLESS FUDGE COOKIES

Makes: 2 dozen cookies
Prep Time: 30 minutes
Cook Time: 10-12 minutes

INGREDIENTS

cooking spray
2 1/2 cups powdered sugar
3/4 cup unsweetened cocoa powder
1/4 tsp salt
4 cold large egg whites
1/2 tsp vanilla extract
1 1/2 cups chocolate chips
A handful of sea salt (optional)

INSTRUCTIONS

1. Preheat the oven to 350°.

2. Line two baking sheets with parchment paper and lightly grease the sheets with cooking spray.

3. In a large bowl combine powdered sugar, cocoa powder and 1/4 tsp salt.

4. Stir in egg whites and vanilla. Once those have been stirred in, add in your chocolate chips.

5. Scoop tablespoon-size mounds onto prepared baking sheets and sprinkle coarse sea salt on the top and bake until set, 10-12 minutes.

6. Let cool for about 5 minutes on baking sheet then carefully transfer cookies to a cooling rack with a spatula to cool down completely.
